Survivor Story of the Month: Jonathan Spencer

Question: When did you acquire your brain injury?

Answer: I had a car accident in 1978

 

Question: What were some of your initial obstacles?

Answer: At first, I could not walk, speak, or see out of my left eye. After intensive therapy I was able to recover.

 

Question: What were the things or people who motivated you?

Answer: My family and God.

 

Question: How has P.G. helped?

Answer: I made many new friends and was able to get out in the community and enjoy new experiences.

 

Question: What words of advice would you like to encourage someone who has just acquired ABI?

Answer: Don’t give up! Keep trying to work hard. You will get there eventually. You can do a lot more than you think you can.

GOLDEN SWEET CORNBREAD

INGREDIENTS
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup milk

DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9-inch round cake pan.

2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan.

3. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the load comes out clean.
